Pimiento Cheese Croquettes

Croquette hors d’oeuvres, blend of roasted red pepper, sharp cheddar, rolled in panko breadcrumbs served with homemade tejano red sauce

Campfire Baked Brie

Our baked brie is wood-fired and then smothered in honey, lemon juice, garlic & fresh rosemary then served with a variety of crackers and fresh breads

Garbanzo Bean Champalos

A gluten free garbanzo bean flour dough with:

*Smoked salmon, cucumber and tomato coriander relish

OR

*Tomatillo salsa with chorizo, caramelized onions and cotija cheese

Charred Vegetable Brochettes

Wood-fired skewers with lightly marinated vegetables (bell peppers, zucchini, tomatoes, button mushrooms and red onions)

Bacon Wrapped Dates

 Medjool dates stuffed with choice of toasted almonds or Mexican chorizo & wrapped in bacon

Farmers Salad

Mixed greens with roasted corn, shaved pickled beets, heirloom carrots, fresh red onion topped with goat cheese

Suggested dressing: Balsamic soy or hazelnut vinaigrette

Lamb Meatballs with Couscous & Carrot Harissa

Cabrito spiced meatballs, served on a bed of couscous with heirloom carrots and Moroccan harissa

Southwest-marinated chicken served with a side of cooked vegetables from local Colorado markets

Our Rates

Our parties start at $25 per person, which includes:

  • Unlimited pizza, salad and an appetizer.
  • Flavored water or freshly squeezed lemonade
  • 3 hours of service
  • Full staff ready to prep, cook and serve

* Pizzas are fully customizable to please all guests

* Although dessert is not on our menu, we have plenty of options if you are interested!

The following additions can be made:

  • Additional appetizers are $3-$7 per person
  • Additional entrees are $8-$10 per person
  • Beer and wine service, we have 3 beer taps on Ole Blue! This service varies in price depending on number of guests (We do not sell beer & wine, simply provide the service of it)

Additional costs and our minimum:

*Our minimum is 50 people, which comes out to $1,250 for the basic package. You may certainly have a smaller party but you will be charged our minimum.

*We ask for a $300 non-refundable deposit for every party

*Wedding prices may vary, please call for more information

*For parties of more than 50 people we charge for additional staff members to ensure the party runs smoothly

* “Ole Blue” is very old and because of this travel fees may apply

* Sales tax and 18% gratuity charge apply
